Spouse started developing a cold sore (currently on day 2) and accidentally spit in my eye while talking. quickly rinsed my eye out w eye drops, but is there anything else that can be done & what is the risk of me developing ocular herpes from this?

"Spouse" implies you've been together for a long time (years?). If you kiss and have sex with normal frequency, you have been repeatedly exposed to his oral herpes, whether or not he has had cold sores at the time. This event adds little if anything to your risk. You may already be infected; half of all adults have HSV1, whether or not they ever had a known cold sore etc. Don't worry about it.
