I love eating picked vegetables. they're tasty and low calorie but i read that people who are 65 and older have a greater chance of getting stomach cancer from them. can i eat pickled veggies daily and if so, what size portion is acceptable w/o risk?

There is a higher incidence of Ca of stomach in east asia where they eat pickled vegetables and fish rich in nitrates and salt from childhood. The culprit are nitrates in large amts and for long duration. If you eat a moderate amt and pickled in less nitrates and in moderation you are fine. Enjoy!
