Will crunches/push ups help prevent saggy skin while losing weight?

Probably not much. Congratulations on working to control your weight, and of course good physical conditioning always is healthy. But this particular exercise won't help in the short run. But don't worry too much: when you successfully lose weight, your excess skin will naturally contract and become tighter. If you're quite seriously obese, it may not return to normal, however. Good luck.
