Why does it feel like my mouth is coated on the inside?

Could be a few reasons. Poor oral hygiene, sticky foods, lichen , planus, medications and thick ropey saliva. Also a dry mouth with little saliva can cause this feeling. See a dentist for evaluation. Rinse mouth with chlorhexidine or hydrogen peroxide.

Sometimes the mouth can feel coated, especially if one has Oral Fungal Infection (Thrush) after use of Antibiotics for other treatments. Also much Milk and Dairy products can give the impression the mouth is coated. When in doubt let the PCP take a look at the mouth.
