"Cracking" of the neck by quick lateral movements can result in pinched nerves or strained muscles. It can also result in hyperlaxity of the joints and a predisposition to injury when you are older. It is best to avoid "cracking" any joints, but the neck is a particularly sensitive area and damage can be more severe.
