Eating carbs will not cause insomnia. Caffeine or other stimulants may cause difficulty in falling asleep or staying asleep. Excess liquids after dinner may lead to multiple awakenings to empty the bladder. Tryptophan containing foods (turkey, think large Thanksgiving meal) can produce drowsiness. So, foods can play a role, but sugar intake in adults or high glycemic index foods typically don’t.
