Alcohol consumption: In moderate amounts should not interfere with healing or digestion after gallbladder surgery. If you have other GI problems such as excess acid, gerd, ulcer, or liver disease, alcohol would be bad even without the gallbladder operation.

About a week: I ask my patients to avoid alcohol for at least a week after gall bladder surgery. When your diet is back to normal, which usually is in a week or so, is a good handle.
