i have glucose intolerance, my a1c is 5.6,when ever i eat late, or a desert late nite, i get up with a dry mouth and dry eyes, though im fine all day.

Osmotic diuresis?: Probably you are facing dehydration from osmotic diuresis and that is making you dry.
