Not a problem: A half-thyroid should be fine, assuming the remaining 1/2 thyroid is normal. That 1/2 thyroid will enlarge a bit, but if it is making enough thyroid hormone (as assessed by a blood test) then you should be fine. Diet will really not affect it much. There is plenty of iodine in a normal american diet.
