How does therapeutic hypothermia help tissues during bypass surgery? wouldn't slowing cellular metabolism reduce the required energy needed to live?

Tested/timed: These procedures are initially tested on animals before they are tried in humans because they can take tissue samples for microscopic exam & define both time limits & acceptable temperature change before damage occurs. Surgeons often practice the procedures on mock ups to get their times down to acceptable levels before they use them on patients.
