Injuries can: be sustained during the most mundane of activities, so yes, you can be injured doing a quad stretch. If you are 7 days out from arthroscopic surgery and you have had an acute change, you should contact your orthopedic surgeon to discuss.

Less likely : Obviously quad exercises are the mainstay exercises for knee injuries or post knee surgeries. You may get knee pain though rehab from overdoing and you may need to take a day or two off or modify the exercises. Ice the knee. If the knee swells or becomes even more tender when u return back to the normal rehab discuss this with your therapist or your physician. Good luck
