Things to ponder: Cooking does two main things; kills off germs that might make you sick & makes the meat easier for your digestive system to process. When you have a solid chunk of meat (not ground like hamburger) searing or cooking the outside enough to seal the tissue kills all the germs. Cooking to at least medium will make it more digestable.If you cook it well you are not adding to safety but may loose flavor
