Is there anything you can do to lower a high red blood count as far as diet?

How high and why?: Diet is not likely to affect your RBC count unless you become deficient in iron, folic acid and B12. You need to consult a doctor to see if your RBC count is abnormally elevated, If it is abnormally elevated then it would need to be investigated for cause and proper treatment.
