Hard to say: Gluten sensitivity is more directly related to the tissue injury triggered by immune IgA antibodies on the gut.The IBSD/belly pain/ etc. are your standard features.However, the gluten sensitive patient may also have allergic symptoms or cross reactivity to non gluten foods/substances that can trigger a variety of allergic symptoms like itching.
