Food Allergy: Allergy to any food, in this case corn/maize will cause symptoms of oral itching, lip or tongue swelling, hives, breathing difficulty and/or throat closure etc. It is caused by IgE antibody against a specific protein in the food. Food allergy is diagnosed with clinical history followed by skin or blood test and that information helps establish the diagnosis and severity of the allergy.

Crazy Immune System: Essentially allergies occur when your immune system goes crazy and decides to has to fight against things it should be ignoring. The immune system of people without allergies simply ignores the pollen in the air or the dander on their cat while an allergic person's immune system creates cells to fight against the pollen or dander. Not a simple answer: An allergy is an exagerated immune responce to a typically benign trigger. You can have allergic responces to many things like pollens, animal dander, foods, medications, among other things. Symptoms may be bothersome, but benign, or can be fatal. Not all reactions to exposures are allergies and if you think you may be allergic , i recommend being evaluated by a board certified allergist.
