Need more info: How long ago were fillings and partial root canal done? Why wasn't root canal completed. Which teeth were treated. Which teeth are sensitive? How long ago was the infection treated (root canal)? How extensive was the other surgery (fillings)

Sensitive teeth: Not sure which teeth were filled or how deep the restorations are. A common cause of maxillary tooth sensitivity in sinusitis (allergies/common cold) so it may not even be related to your dental care. Discuss with your dentist.

Sensitive teeth: It's not unusual to have sensitive teeth after a recent filling. You had five so 5 times more likely. It's also not unusual to have some pain or discomfort following a RCT. Sensidyne is not usually indicated or effective for either of these situations. I suggest you discuss your sensitivity with the dentist actually treating you.
