Natural instinct: When faced with the unknown we assume its a threat until proven otherwise and so the body prepares to deal with the threat by releasing adrenaline which prepares us for fight or flight by shunting blood flow to muscles and brain. In the modern world neither option is viable so, like the rabbit, we freeze. As you talk to more strangers in similar situations this perception of threat will fade.
