Blood may clot: if the flow is very slow. There is an anti-coagulant in the collection bag but the blood must flow fast enough to reach the bag before it has time to clot.It was a good idea to try to expand your blood volume with generous water drinking but you may have small veins and the blood just doesn't travel that fast. But talk to your doc about clotting tests especially if family history of clotting issue
