The top/back of my mouth/throat is extremely sore. tender and hurts to swallow. i don't have tonsils anymore so could this be to do with sleep apnea?

Possible: it could be simply dry and irritated due to mouth breathing/apnea at night but if so should quickly resolve in the am. if it persists all day you may have a viral infection. with no tonsils it is less likely to be strep. take motrin and use salt water gargles and see your doctor if it persists or worsens.
