What is the likelihood that std's like gonorrhea could be transferred from saliva alone with deep kissing? how would oral infection be treated?

No risk, no worries: Gonorrhea and other STDs are not transmitted by saliva or by kissing, even prolonged or "deep" kissing. Oral STDs are caught only by performing oral sex on an infected partner. (Oral herpes due to HSV1 can be transmitted by kissing, but isn't considered an STD.) Oral gonorrhea and other STDs are treated with the same antibiotics as genital infections.
