Gel phenomenon: You should probably visit a physician to have a physical exam. It sounds like you may be experiencing a "gel phenomenon" where your knee feels like it sticks after inactivity. You are later able to extend your knee. This happens because of problems with your meniscus in your knee, osteoarthritis, and other conditions. Your orthopaedist may want x-rays or to perform arthroscopy to look/fix knee.

Squatting is hard...: ...on the knees of any adult. Stiffness after rest, after strenuously moving the joints or after being in one position too long---this is very common. I am familiar with an "Indian Toilet." Other than bending and straightening that leg a few times to loosen up the joint before using the toilet, I'm not sure what you can do. If the problem gets worse, I advise you to see a doctor.
