Varies: There is no "should" about kale. But about half your food should be low carbohydrate vegetables for best health, so kale can be part of that. I find that if you eat too much of any one thing, even something as good as kale, you can have problems with it. So, maybe eat 2-3 bunches of Kale a week along with other vegetables.
