It takes time: It's because the inflammation from scabies lags hours or even several days behind the the mites' activities or survival. The symptoms are mostly from the body's allergic reaction to the mites, droppings, and eggs, and it takes time for allergic reactions to develop. In fact, with successfully treated scabies, it takes up to 2 weeks for new lesions and itching to stop happening. So give it time.
