Not sure but...: It could be the glutamine. An important amino acid. In Chinese cooking they frequently add MSG (Monosodium glutamate) as a flavor enhancer. There is a well described "Chines Restaurant Syndrome" which you may have. Check it out on www.mayoclinic.com
