No risk, no problem: Raw or undercooked pork carries no health risk in the US and other industrialized countries. The parasite problem (trichinosis) has been gone for more than 50 years, except maybe a rare case in home-raised pigs, especially in the south. Due to past trichinosis risk, out of habit most people avoid rare or raw pork, but you could chow down on an uncooked porkchop with no risk at all. No worries!
