can eating a gluten free diet if not diagnosed coeliac then cause a reaction when eating gluten in future. eg can u make urself intolerant by avoidi?

No: Gluten sensitivity is a genetic disease. You cannot give yourself a genetic disease or downregulate the gene for gluten metabolism sufficiently by avoiding gluten.
