Needs not be: You buy rice products (noodles etc) from asian stores and corn products at most stores. If you do your own cooking and baking, the cost should not be any higher. It's the prepared products which are more costly probably related to the total volume sold.

Not expensive: Buying and cooking rice is not expensive, eating legumes such as chickpeas and lentils, red beans and black beans with the rice is not expensive. There are many inexpensive beans and grains that make a whole protein, provide carbohydrates and good nutrition on a celiac diet. Peanut butter also is not expensive for a jar.
