A Chemistry Lesson: All fats are made up of something called glycerol with three "fatty esters," chains of carbon (C) & hydrogen (H). Unsaturated fats do not have a H attached to each open C and therefore unsaturated. They are usually liquid (oil) at room temp. Trans fats are mostly man made from unsaturated fats by adding more H's to make semisolid fats. They are now known to increase the risk of heart disease.
