No: I'm confident here. Lyme disease is both a real entity and a "pop" / "fad" diagnosis. There are normally a lot of lymphocytes in the small intestinal mucosa, though having a lot in the epithelium itself is more suggestive of gluten enteropathy or a few other entities. If you've got lab support for your gluten allergy (which also has "pop" proponents), this is your explanation instead.
