Your doctor can guid: There are blood tests, called thyroid function tests(tfts) which need to be ordered and monitored by your doctor. Two tests commonly used are: TSH level and T4 level. These have to be brought into normal range by adjusting the dose of your thyroid medication.

Labs and symptoms: You need blood test to know if the thyroid med is working. Then we use symptoms to optimize the treatment within the normal range. All in all, the most important thing is the lab work.
