Difficult to Say: Witout knowing specifics about your mom's age, condition of teeth, if she has dentures, etc. It's hard to give a really meanigful answer. Part of normal aging is changes in the way foods taste so that could be a factor. The numbness thhough leads me to think it could be neurological - is she diabetic? She should see her dentist to see if they can find an answer & then go from there.
