Cough x 1yr., fatigue, joint pain, platelet 451, abs monocyte .7, dry eyes, mouth sores, normal chest x-ray. could this be sarcoid?

NO: Usually x.Ray will show hilar adenopathy with sarcoidosis. Your description points more to viral upper respirator syndrome. Drink warm fluid, take analgesics and see your doctor if symptoms persist.

Possibly: These symptoms could possibly be due to sardoidosis, but they could also be due to many other conditions. Dry eyes can usually just be treated with artificial tears, but for the rest of the symptoms your should be seeing your primary care physician ASAP to be evaluated.
