Salty: Aside from the question of whether or not the food is otherwise heart-healthy, the greatest risk is from the excessive sodium in chinese food. The result is fluid retention, high blood pressure, heart failure and an increased risk of stroke and heart attack. Other than that, there's no problem.

Moderation?: Well they moderation in all things, but there is a limit to that. They also say, know thyself. So i recommend you get a baseline of your risk for heart disease by getting a physical and fasting labs including your cholesterol and blood sugar levels. You can then decide how much you need to stay healthy. You can also ask for less oil next time you get it as this would also help.
