What is the line in the middle of the roof of mouth it's quite rough and rugged etc raised if u will is this normal.?

Normal: As the palate is developing while you were in the womb it consists as three parts that merge to form the roof of the mouth. The two largest parts come in from the side and fuse together leaving a midline ridge of bone and lining. It is a normal result of palate development.

Rugae or torus : It is probably normal anatomy of the palate. Rugae are in the anterior one third. A torus is usually more in the middle. See a dentist for confirmation.

Normal: I think you mean the normal folds or raphe that we all have. Sometimes they will become more prominent after eating some foods, but they are normal.
