My son has found a knot on the back of his head and says he didn't hit it on anything, what could it be?

Could be many things: A common finding is a lymph node which would feel like a marble or bean under the skin & might move some.Direct pressure could produce discomfort.Many of these ar located around the back of the skull & neck and are more easily found here than elsewhere in the body where they are buried in the muscles or flesh.
