Stop sooner: Every person has a different tolerance for alcohol. The time to serious intoxication depends upon how much is consumed per unit time and for how long. But the worst problems with alcohol are due to alcohol poisoning which can take place before the person realizes how intoxicated he has become. Agencies here and abroad recommend no more than 3-4 oz. Of alcohol (modest "drinks") per day.

Varies: Everyone is different in how they react to alcohol and when withdrawal comes. It depends on the liver, on how much crosses the brain barrier, and a number of other factors-- so not a really easy answer.
