How accurate are the charts with crown rump fetus measurements? what does it mean being in the 5th, 50th and 95th percentile?

Very accurate: Those charts are compilations of hundreds of thousands of data points, and are generally fairly accurate. Those percentiles are for averaged norms at those levels.
