Basics: The basic is the following: every swallow is initiated in the mouth. The tongue forces the food against the roof of your mouth. Then it is pushed back and to the sides of your throat and then down. When it goes down your airway protected by your epiglottis and the esophagus (food pipe) opens to allow food down the right pathway.
