Proteins, etc: Squid ink isn't really ink, it's a biologic secretion with protiens, fats and carbohydrates. You could be allergic to any of these.

Mollusk: Squid is considered a mollusk (oyster, clam, abalone etc) although a free-ranging one. Its ink contains proteins which can sensitize people just like clams or oysters do.
