Papilledema: Not likely unless respiratory failure or increase intra-cranial pressure, both uncommon in sleep apnea.

Sleep Apnea: Untreated sleep apnea causes negative intrathoracic and naso and oro pharyngeal pressure, these latter structures being close to the eye and if you have a eye condition could possibly contribute but no studies or data on this yet.
