Yellow eyes: Yellow eyes can rarely be due to the overconsumption of carrots, but they are usually due to elevated bilirubin levels in patients with liver disease or excessive blood destruction. It's not something you can usually control, but ask your physician what is causing the yellowness of your eyes and if there are any medications you're taking or any dietary issues that are making it worse.
