Does diet really affect your throat health?

No: I'm not sure what "throat health" is, but in general your diet will not affect your throat. The one exception would be a decrease in acid production from the stomach (spicey foods). If you have acid reflux.. This can cause chronic irritaiton of the throat and improve "throat health.".
