Unlikely: If you are down to one vicodin per day it would be highly unlikely in my experience for you to have withdrawal symptoms by going from one to none. Your anxiety about it will probably cause more symptoms that stopping the med. This would be best supervised by your doctor however if you are scared about stopping.
