Gluten enteropathy: When a person has celiac disease, or gluten enteropathy, the only way to really stay well is to completely avoid eating foods containing wheat, rye and barley, which are the ones that have gluten in them. If even small amounts are eaten, the inflammation in the small intestine skyrockets and chronic inflammation can lead to cancers. People who have celiac disease should see a GI doc regularly.
