To make money: The insurance company needs to know what risks they are assuming when they insure you. Laboratory tests can help them determine if you have diabetes, high cholesterol, drug abuse etc. Riskier people pay higher insurance rates or may not be offered coverage at all. Healthy people are less risk and can be insured at less cost to the company. The embarrassing factor is not intended.
