What exactly happens during a sex therapist session?

Depends: Depends on what is wrong. Most of the time it is pure counseling, you talk, they ask questions and listen and give advice and feedback. Rarely a licensed sexual therapist can request the assistance of a sexual surrogate for "hands on" therapy, but this is rarely needed.
