Lots of things: The major contributor to whether or not your heart rate will be up or down relates to sympathetic and parasympathetic hormones (adrenaline and noradrenaline, etc). Add on top of that many medications or drugs that can affect this including caffeine, betablockers, alcohol, etc) and you can see dramatic effects on heart rate.
