Two main sources: Your flattus is composed of the air you swallow & gasses created by grems in your digestive tract.Bacteria & other germs live off the material your body does'nt absorb during digestion & produce a gas in this process. Lactose ingested by intolerant people will make them gassy because the germs love the left overs. A sugar in vegies(fucose) makes most of us gassy since we can't absorb it.
