Malabsorption: I understand your question to say that most of the time your stool floats, sometimes it doesn't. Certainly noticing that occasionally your stool floats is normal, but malabsorption should be considered if floating is the usual case. Tests for lactose intolerance and other forms of malabsorption (poor absorption of nutrients in the intestine) should be pursued. Good luck!

Sounds ok: Your stool production can vary depending on many factors; what you eat and how you eat, how much water you are drinking etc. Make sure to get 25 to 30 grams of fiber a day. Add more vegetables, cut down portions of pasta. Eat more slowly enjoy each bite. Drink plenty of water. Stay healthy
