Don't leave it out: Salmonella infections can occur due to undercooked eggs or spoiled egg products - like mayonnaise, especially when left out in warm/hot temperatures. If you make home made Mayo - be sure to use fresh eggs, refrigerate it promptly, and dispose of unused portion when beyond recommended shelf life. Take Care!
